Easy and Creamy White Chicken Enchiladas

Before I got married I never cooked. And by never I mean I actually did not cook. The few years I lived on my own I survived off of Oreos, Grilled Cheese Sandwiches and Chips and Salsa. Probably not the healthiest diet but it worked back then. Now I have to cook for two and don't want to submit my husband to my previous eating habits. Here is a new found favorite recipe in our home. Delicious and easy enough for the novice cook!

Ingredients
  • 6-8 corn tortillas (enchilada size)
  • Two large chicken breasts
  • 1 cup sweet corn
  • 2 cups shredded Mexican blend cheese
  • 3 tablespoons butter
  • 3 tablespoons all purpose flour
  • 1-1/4 cups chicken broth
  • 1 – 10oz can cream of chicken soup
  • 1 cup sour cream
  • 1 – 4oz can chopped green chiles
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
Instructions
  1. Preheat oven to 350 degrees F.
  2. Fill each tortilla with shredded chicken, a spoonful of corn and a pinch of cheese.
  3. Roll and place in the bottom of a baking dish with the seam side down.
  4. In a pot over medium heat melt the better. Add flour and whisk into a thick paste.
  5. Add chicken broth, cream of chicken, sour cream, chiles, salt and pepper.
  6. Whisk gently for 5 minutes until warm and smooth.
  7. Pour the sauce over the enchiladas and top with remaining shredded cheese.
  8. Bake for 25 to 30 minutes and serve warm.
These smelled so good when I pulled them out of the oven, and Devin and I couldn't help but stuff our faces. It definitely has the husband stamp of approval. So give them a try. They are super easy and super delicious!

Back to School.

Every time I think about going back to school this clip plays over and over in my head. School started on Monday and I'm not sure how I feel about it. All of my classes are online which I'm not sure about either. Have you ever taken online classes? How did you like them? This semester is much different than last semester. My classes are totally different. I went from all Psych to all Business. I really enjoy both but they are definitely not the same. Hopefully with taking classes online it will give me more freedom to cook yummy foods and do fun projects. Look for those on the blog soon! Good luck in classes!

Bad Blogger. Bad. Also a running Duck.

Guess who has been a bad blogger? This girl. Work has been crazy and I've neglected this aspect of life and I'm sorry. School starts this Monday and that hopefully will help me have a more balanced schedule = more time to blog :) There have been lots of fun activities since my last post. Devin and I went kayaking on the Provo river. We made a few trips to Park City to visit the parents. Drove right through the smoke of the fire at Jordanelle. Celebrated Aubree's birthday. Finally got a shower curtain. All in all at has been very busy and I'll admit I'm actually excited to start school again. I'm sure that will change in a couple days when I have to start on my accounting homework. But anywho... I'M BACK! This video is one of the funniest things that happened while on my hiatus. This little duck is like a dog playing fetch. Watch how he literally RUNS on the water. We laughed over and over watching this. I hope you enjoy this as much as we did. XOXO Kinzie

Let's go to the MALL!

Have you ever watched the show "How I met your mother"? If not I am deeply saddened for you. For those that have watched it know exactly what the title of this post is about. This song has been stuck in my head for days, it is slightly annoying but makes me smile. I thought I would share this smiling with you. Easy Red Lobster Biscuits

Yesterday I woke up from a wonderful Sunday nap and I was STARVING! I've been wanting to try this recipe for a while now, and when I awoke from my deep slumber I got right to it. The recipe is surprisingly easy for such a delectable snack, 

Ingredients: 
2 cups Bisquick baking mix

1/2 cup cold water
3/4 cup shredded sharp cheddar cheese
1/4 cup butter
1 teaspoon dried parsley
1/2 teaspoon garlic powder
1/2 teaspoon italian seasoning

Directions:
1 Heat oven to 450.
2 Combine baking mix, water and grated cheese in a bowl.
3 I mixed it all together and rolled 1 inch balls of dough
4 place on an ungreased pan.
5 Melt butter and spices together. (I found that I really didn't need as much butter as it called for, you probably could half it. 
6 Brush the biscuits with the butter and bake for 8 to 10 minutes.


7 This batch makes about a dozen yummy biscuits!

They came out super golden and Devin and I could barely stop stuffing our faces. These are addicting I warn you!

Cinnamon Monkey Bread

Remember this post? Oh yeah you do because I just posted it like two days ago. Basically ever since last weekend I have been craving that monkey bread like crazy. It was just so dang good. We seriously devoured the entire thing in one morning, so if you are on a diet this may not be the recipe for you. Maybe try a green smoothie or something. Those are mega tasty....anyways back on track. If you want to impress someone, make them this. It looks like you didn't try too hard, but will still blow their mind. My mom found this recipe on the Taste of Home, it is super easy and yummy! Enjoy :)



Ingredients

  • 4 tubes (7-1/2 ounces each) refrigerated buttermilk biscuits
  • 1/2 cup sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup butter, melted
  • 1/2 cup packed brown sugar

Directions

  • Cut each biscuit into four pieces; shape into balls. In a small bowl, combine sugar and cinnamon. Roll each ball in cinnamon-sugar. Arrange evenly in a greased 10-in. fluted tube pan(If you aren't a chef, a fluted tube is basically a bunt pan.) Sprinkle with remaining cinnamon-sugar.
  • Combine butter and brown sugar; pour over the top. Bake at 350° for 35-40 minutes or until golden brown. Cool for 5 minutes before inverting bread onto a serving platter.
For a little more flavor add some nutmeg to the cinnamon/sugar mix. Try not to eat the whole thing in a day. I dare you.

Our Substitute Camping Trip

This weekend we went up to Park City to visit my lovely parents. We were planning on going camping this weekend, but a few things came up and we weren't able to go, but we made the best of it anyways. We ate tin foil dinners, a breakfast skillet, and of course S'MORES!! We loved sitting around my parents fire pit, sharing many memories and stories.
